Clemente's is a mobile, artisan pizzeria and catering company. Our “unique selling point” is that our restaurant is built in a restored vintage San Francisco trolley. The exterior of the trolley was restored to its original rich mahogany and abundant brass grandeur, while the interior is retro- fitted with state of the art stainless steel equipment and a kitchen line that exceeds all NFS standards. Prominently displayed in the center of our shiny stainless steel kitchen is an old world Di Fiore forni wood-fired brick and mortar 4000 pound pizza oven, which was imported from Rome.
Our wood- fired oven operates at 900°, cooking a thin crust pizza in 90 seconds. The extreme heat of the oven floor sears the bottom of the pizza to assure a crisp bottom crust and the open flame perfectly chars the cornice top rim of the pizza while preserving the soft and silky interior dough.
CWFP follows the ancient artisan traditions in preparing our dough. We use a highly refined Italian flour, bakers's yeast, water and salt only. We slow-mix and hand knead our dough, never using a rolling pin or other mechanical means. Most importantly we use a three day cold rise process that enables the fermentation process to maximize the rich flavors of the yeast.
